Tomato, Mozzarella, Basil Salad

Fresh vine tomatoes (red or yellow varieties)

Real salted mozzarella cheese (comes in a watery ball usually in the imported cheese section)

Fresh basil leaves (washed and gently dried or air dried)

Good quality olive oil

Pesto

Salt and fresh ground black pepper


Cut tomatoes in ¼ inch slices and place on platter, salt and pepper the tomatoes, cut the mozzarella in ¼ inch slices and place on the tomatoes, place one basil leaf on top, drizzle with olive oil and pesto, salt and pepper again, garnish with extra basil leaves. Don’t prepare too far in advance. You can also prepare this using the tiny mozzarella balls…no matter how you put it together, it always looks inviting and fresh!
