Sussi’s Aebleskiver

500 grams flour

250 grams melted butter

3 ½ dl. Milk (lukewarm)

6 egg yolks

6 egg whites (whipped)

2 tsp. salt

4 tsp. baking powder

lemon (juice from 1 whole lemon) or use zest


Blend milk and yolks. Mix together flour, salt, baking powder and lemon and add to milk mixture. Add melted butter. Fold in stiffened whites. Let sit 5 min. to rest or longer. Put butter in each hole of aebleskiver pan (available in the U.S.), turn with knitting needle or stick until done and browned. Serve with jam and powdered sugar. If your kitchen doesn’t have a kitchen scale with both systems of measure, then break down and get one…you won’t regret it. A wonderful Danish Christmas dessert!
