Strawberry Pecan Bread

2 cups washed & hulled whole strawberries

3 cups + 2 T. flour

2 cups sugar, + extra to sprinkle on berries

1 Tbsp. ground cinnamon

1 tsp. salt

1 tsp. soda

4 eggs, beaten

1 ¼ cups chopped pecans

Slice strawberries and place in a medium bowl. Sprinkle lightly with a bit of sugar and set aside while preparing batter. **Although you can put the berries in sliced, I prefer to process them at least a little because the sliced strawberry makes a soggy spot in the finished bread….not pretty and definitely not as tasty!


Grease and flour two loaf pans. Combine flour, sugar, cinnamon, salt, and baking soda in a large bowl and mix well. Blend oil and eggs into strawberries; add to flour mixture. Stir in pecans, blending until all dry ingredients are just moistened. Divide batter between two pans. Bake in preheated 350 degree oven 45 to 50 minutes or until tester comes out clean. Let cool in pans on a wire rack for 10 minutes. Turn out the loaves and cool completely.


Try not to get sick licking the spatula…the batter is sooooo yummy!
