Stir-Fried Noodles

(Only serves 1 or 2, so double or triple it!)


1 Tbsp. oil

1 package fresh thick noodles (Udon or can use yakisoba pkts.)

1 slice loin pork or 2½ oz. pork, cut up

½ onion cut into chunks

1 green onion, cut into 1½ inch pieces

1 cabbage leaf, chopped

1/3 cup bean sprouts

1 Tbsp. curry powder dissolved in 1Tbsp. water

1 Tbsp. soy sauce

1Tbsp. oil


Heat 1 Tbsp. oil in wok or big pan over medium heat. Stir-fry noodles until partially browned. Set aside and keep warm. Heat 1 Tbsp. oil in wok; stir-fry pork until color turns pale. Add onion, green onion, and cabbage; stir-fry for 5 minutes or until all veggies are tender. Mix curry powder with water; add curry powder mixture and stir well. Add soy sauce and noodles; stir well. Serve hot!
