Roasted Potatoes

1 ½ kilos potatoes, can use new potatoes with skin on or medium sized baking potatoes with the skin off. Wash and cut potatoes into 4 sections. Let sit in cold water for an hour or so before roasting them.


Place potatoes in baking pan and coat with olive oil (don’t go too crazy with the oil), sprinkle with dried oregano and salt and pepper. Squeeze the juice of 1 lemon over the dish of potatoes. Make certain it is all coated and bake at about 375 degrees for about 35 minutes, or until the potatoes get crispy edges and the oil is bubbling. Squeeze a little more lemon juice over the potatoes before serving.
