Morning’s Veggie-Beef Soup

1 large (46 oz.) can V-8

1 (32 oz.) jar spicy V-8

2 tsp. or more onion powder

Lean ground beef, browned (about 1lb. or less)

Sliced fresh carrots

frozen or fresh green peas

¼ tsp. celery salt

fresh or frozen corn

sugar, to taste

cumin, to taste (1 Tbsp.+)


Put all ingredients in large pot. Simmer until carrots are cooked through. Add more sugar, cumin, or onion powder to adjust flavor. Make it even better with fresh garlic!


Morning serves her soup with her favorite homemade corn bread crumbled on top of it. It is so fast and incredibly tasty. Add more or less V-8 depending on the size of your family. You can eliminate the meat, if Stacy’s coming to dinner, or if you just prefer vegetarian, like Mark! (Tracy Seliger)
