1 cup butter
½ cup sugar
2 cups flour
½ cup corn starch
Mix all of above and press into a jelly-roll pan. Bake at 300 degrees for 12-15 minutes
4 cups chopped walnuts (reserve ½ cup)
4 eggs
2 ½ cups brown sugar
4 Tbsp. flour
6 oz. coconut
Mix second mixture and put on top of baked shortbread. Bake at 300 degrees for 5 more minutes. Let it cool.
Frosting:
1 stick butter
3 ½ cups confectioners’ sugar
4 oz. cream cheese
1 tsp. vanilla
Mix, frost and sprinkle with nuts. These are very elegant and unique cut diagonally. Serves many.
