Karen Harrison’s Refrigerator Rolls

Christi Jensen

1/2 cup margarine (I probably would use butter, though)

½ cup sugar

2 tsp. salt

1 ¼ cup hot water

3 eggs

2 Tbsp. yeast

4 to 5 cups flour

Cream butter and sugar; add salt, water, eggs, and 1 cup flour. Beat. Add yeast. Add remaining flour to make a soft dough. Cover and let rise until double. Place in fridge. Three hours before baking, roll and shape as desired. Cover and let rise. Bake at 400 degrees for 6 to 8 minutes.

Karen, who I met in Tokyo, was known for making wonderful breads…I have never personally made these, but have tasted many of her recipes and know this must be fabulous!
