One recipe of Bonnie’s Freezer Pizza Crust (can half the recipe)
Homemade marinara or a good jar one (Papa Gallini, please forgive!!)
3 cups mozzarella, shredded
Reggiano Parmesan, shredded
Fresh spinach
Pepperoni
Any other pizza type toppings
Grab a small ball of dough no more than 4 inches in diameter (remember it rises). Roll out to about 1/8 inch thick round about 8 inches or more in diameter. Pour on about 1 Tablespoon marinara, sprinkle some mozzarella, a little parmesan and whatever other toppings you prefer. Mushrooms work best if sautéed, probably onions should, too. Fold over and pinch the sides shut. Place on parchment paper covered baking sheet, don’t forget to label the sheet nearest your calzone, and bake till lightly browned at 500 degrees for about 10-15 minutes. Brush with olive oil, pour a couple of tablespoons of marinara and enjoy! This makes a fun party food because you can get people in the kitchen creating calzones who might normally never set foot in the kitchen. It gives all new meaning to the phrase, “Roll your own!”
