Denise’s Almond-Crusted Salmon

Salmon filets or steaks

Butter

Fresh garlic

Almonds, finely minced in processor


Pat salmon dry. Melt a few tablespoons of butter and add minced garlic to it. Brush salmon with garlic-butter. Sprinkle thoroughly with nuts, pressing nuts into fish. Lightly coat large skillet with butter. Fry salmon in butter until cooked through. Place lid over skillet towards the end of cooking to keep warm. Great with sauce below. My good friend, Denise McKell made this for me once when I visited her in Tokyo and I loved it!!


Sauce

1 cup real mayonnaise

juice of ½-1 lemon

¼ cup onion, finely minced

fresh dill weed, chopped

salt

(optional) dill pickle, finely chopped

**the sauce recipe can easily be halved since it does make a lot.
