Danish Marzipan Buns

Dough:

300 grams flour

200 grams butter

2 Tbsp. sugar

50 grams fresh yeast

2 eggs


Mix yeast with eggs and sugar until yeast is dissolved. Add flour and butter until a smooth dough. Let the dough rest while you make the filling.


Filling:

150 grams marzipan

80 grams sugar

80 grams soft butter


Mix til smooth. Roll out dough and cut it in 18 pieces. Put filling on each piece and fold the dough around it. Beat an egg and “paint” the buns. Drizzle with toasted almond flakes and pearl sugar. Bake the buns in muffin tins about 12-15 minutes at 200 degrees Celsius.


Kiran, one of my best friends from Copenhagen, Denmark made these buns for me on numerous occasions. My most memorable time that Kiran made these was in Trysil, Norway where we would go skiing in the spring with her family. Kiran once texted me while I was going up the ski lift, asking me to join her for Marzipan buns after skiing…YUM!!!
