Baked chicken or rotisserie one (I sometimes bake a flavorful chicken by brushing it with olive oil, sprinkling it with Lawry’s garlic salt and fresh ground pepper and filling it with crushed garlic cloves. Bake at 350 degrees for 1 to 1 ½ hours…the smell is so enticing!) Once the chicken is cooled, chop it into bite-size pieces. A rotisserie chicken works great, too….or as Robin would call it, “rotisierry” chicken
½ cup + Hellman’s mayonnaise
3 or more stalks fresh celery, chopped tiny
3-4 scallions, chopped tiny
Salt and fresh ground pepper
Mix all ingredients and add additional mayo just until it all binds together nicely. Adjust salt and pepper to taste. Serve in an avocado half, on wheat bread, or in a Fadi’s toasted pita…or a homemade pita!
