Christi’s Blue Ribbon Toffee

Christi Jensen

Sprinkle on bottom of buttered 9 inch square pan:

1 cup chopped pecans

Combine in saucepan:

¾ cup brown sugar, packed

½ cup butter (Not margarine)

Bring to boil stirring constantly for 7 minutes. Test for doneness by dropping small amounts in cold water to see if it is hard. Remove from heat and spread over nuts.

Sprinkle over top:

4 -5 Hershey’s milk chocolate bars

Cover pan so heat will melt the chocolate. Spread evenly over the top. Cut into squares while still warm. Refrigerate to set.

On September 28, 1977, at 13 years old, I won a Blue Ribbon at the South Plains Fair in Lubbock, Texas with this toffee recipe. There was no children’s division so they put my toffee against the women and I won! I got a blue ribbon and a small check for about $5.00! Even then I was picky about butter vs. margarine!
