Less than ½ cup butter
Less than ¼ cup olive oil
¼ cup finely chopped green onions
1 Tbsp. garlic, minced
juice of 1 lemon
2 lbs. boneless, skinless chicken breasts, cut into ½ inch cubes
½ tsp. salt
½ tsp. freshly ground black pepper
¼ cup fresh parsley, minced
1 tomato, chopped
1 lb. buttered noodles
In skillet, heat olive oil and butter to sauté green onions and garlic. Add lemon juice, chicken, salt, pepper and parsley. Continue cooking, stirring constantly, 5 to 8 minutes or until chicken is done. Add tomatoes and heat through. Serve over noodles.
