Chicken Bombay

Ingredients:

2 cups cooked and Slivered Chicken Breast (Boil)

½ cup chopped crispy cooked Bacon

¼ cup grated white cheddar

2 Tbsp. finely chopped green onion (white only)

1 tsp.chopped garlic

Up to ½ cup mayo (add a little at a time)

Dash of Tabasco (to taste)

1 ½ Tbsp. curry powder

½ t. turmeric

salt/pepper

¼ cup chopped red pepper

10 sliced raisin bread (toasted, if desired)


Directions:

In a bowl, mix: chicken, bacon, cheese, bell pepper, green onion, garlic, toss to combine. Add enough mayo to combine ingredients. Add Tabasco, curry (add curry a little at a time), turmeric, and salt/pepper. Stir well. Spread onto bread pretty thick. Cut crust off and cut in half or into triangles. Serve with grapes.


This recipe will seem weird to you, if you are scared of curry and if you are a little scared of raisin bread. I admit, I was scared, but you won’t regret this one bit. It makes such a beautiful, unique sandwich that crowds really go for! (Lolita Dalley)
