1/3 cup Dutch-processed cocoa
1 ½ tsp. instant espresso powder (optional)
½ cup plus 2 Tbsp. boiling water
2 oz. unsweetened chocolate, chopped fine
½ cup plus 2 Tbsp. vegetable oil
4 Tbsp. unsalted butter, melted
2 large eggs plus 2 large yolks
2 tsp. vanilla
2 ½ cups sugar
1 ¾ cups flour
¾ tsp. salt
6 oz. bittersweet chocolate, cut into ½ inch pieces **(I subbed 1 oz. unsweetened chocolate, 1 oz. semi-sweet chocolate chips, and 4 oz. semi sweet bar chocolate, once and it worked great!)
Adjust oven rack to lowest position and heat oven to 350 degrees. Make foil sling for 13x9 inch baking pan by folding 2 long sheets of foil; first sheet should be 13 inches wide and second should be 9 inches wide. Lay sheets in pan perpendicular to each other, with extra foil hanging over the edges of the pan. Push foil into the corners and up sides of the pan, smoothing foil flush to the pan. Grease foil and set aside.
Whisk cocoa, espresso powder, and boiling water together in large bowl until smooth. Add unsweetened chocolate and whisk until chocolate is melted. Whisk in oil and melted butter (mixture may look curdled). Add eggs and yolks and vanilla and continue to whisk until smooth. Whisk in sugar until fully incorporated. Whisk together flour and salt in small bowl and then mix into batter with rubber spatula until combined. Fold in bittersweet pieces.
Transfer batter to prepared pan; spread batter into corners of pan and smooth surface. Bake until toothpick inserted in center of brownies comes out with a few moist crumbs attached, 30 to 35 minutes, rotating pan halfway through baking. Transfer pan to wire rack and let cool for 1½ hours. (If using a glass pan, remove the brownies after 10 minutes and cool on wire rack instead…glass will cause the brownies to continue cooking!)
Remove brownies from pan using foil. Return brownies to wire rack and let cool completely, about 1 hour. Cut brownies into 2 inch squares and serve. (Brownies can be stored up to 3 days in an airtight container at room temperature….if you still have brownies left after about 1 day…you need to figure out what you did wrong!)
