Brooke’s Blow Your Mind Slow Cooker Roast

3lb Chuck Roast

1 Onion, Quartered

Carrots, Peeled

Garlic Salt

Pepper

Season roast with garlic salt and pepper. Heat about 1 ½ tablespoons olive oil in Dutch oven on medium high heat till glossy. Add roast and deep sear on both sides. Don’t skip this step!! Add a layer crinkled foil to the bottom of slow cooker to perch the roast on. Quarter onions and place between the foil and roast. Place seared roast on top and add peeled carrots. Cover and let cook on low for 6-8 hours. Could also cook in the oven at 275 for about 3 ½ hours.

After meat is done, pour off drippings and remove fat layer. Add bouillon and water to make 1 ½ - 2 cups liquid. Mix 1 tablespoon corn starch with 1/8 cup water to thicken gravy.
