Bonnie’s Freezer Pizza Crust

Christi Jensen

2 pkg. dry yeast

7 cups flour

1 tsp. salt

2 ¼ cup warm water

¼ cup oil ( I love this with olive oil)

Combine 3 cups flour with other four ingredients. Beat for 30 seconds on low. Slowly add 3 more cups of flour. Knead for 8-10 minutes using the last cup of flour gradually as you knead it in. (No need to hand-knead if you use a Bosch or Kitchen Aid mixer with bread hook). Put dough in greased large bowl and cover with damp cloth. Let rise for 1 hour. Punch down and divide according to size of pizza you want. Yield: 5 large pizzas or 12 personal size. Roll out and bake at 500 degrees for 5-7 minutes. **Will bubble, so watch and poke with a fork. **For personal size pizzas, roll out on the back of a round cake pan and bake them while still on the cake pan. Make sure to grease the back of the pan each time. Cool and freeze until ready to use. Use crust right from freezer. Put on sauce (Pizza Quick is good) about 1 inch from sides, mozzarella cheese, pepperoni, and whatever else you like. This makes a tasty and quick dinner. Pizza crusts keep for several months in ziplocs in the freezer. We also use this dough for our famous calzones!
