1 ½ cup flour
1 ½ tsp. baking powder
2 tsp. vanilla
¼ tsp. salt
½ cup butter, softened
¾ cup sugar
2 eggs
½ cup milk
2 apples, peeled and sliced
Filling:
½ cup flour
1/3 cup sugar
¼ cup melted butter
2 Tbsp. cinnamon
Mix dry ingredients in a bowl. Beat butter and sugar until white with electric mixer and add one egg at a time. Add the milk and the dry ingredients into the egg mixture. Fill muffin cups until half full with batter and sprinkle filling over. Put more batter over until almost full and put apple slices into the batter. Sprinkle with cinnamon sugar and bake for 25-30 minutes at 350 degrees. These are such perfect muffins. My favorite memory of having them…well, there are actually two. Mats, (Ann-Mari’s husband), Morning and I used to run together a couple of nights a week. One night when we showed up at Ann-Mari’s to meet Mats, I said to Ann-Mari, “Have some of those muffins ready for us when we get back.” Well, she did, and they were GREAT! The other time I was so happy to see these muffins is when Ann-Mari showed up at my door holding a blender full of smoothies and a basket of muffins. Now that’s a good friend!
